
Our “Leggerissima Pizza” was born from this unique proposal to combine the classic and contemporary style, always with high quality ingredients.
The name says it all: leggerissima. Lightness is in its essence, with softness, easy digestion, and original flavors. A unique pizza in Fortaleza!
OUR DIFFERENTIAL IN PREPARATION
We stand out by only using special selections of ingredients. Our flour is imported from “Mulino Caputo”, we use “Ó Sole é Napule” italian pelati tomatoes and fresh mozzarella “fior di latte”. A well thought out and well balanced mix to reach an outstanding pizza!
With high hydration, the “Leggerissima Pizza” is made in a completely natural pre-ferment process that goes up to 72 hours in maturation phase. The pizzas are opened by hand so that the air in the dough moves towards the crust, making it more puffy, lighter and very tasty. It’s the best part!
Speaking of the crust… Did you notice that it has small burns? It’s an artistic part of the process! In our wood-fired oven, we bake the pizzas at a temperature above 400 degrees, which, thanks to the high hydration, leaves the Leggerissimas with those traditional characteristics of small burns, reminiscing the touch of wood and artisanal craftsmanship.

All this attention to detail and technique results in a soft and light pizza, with an alveolus-shaped and crumbly crust, with a distinguished and balanced filling.

Oh, and there’s a good way to live the full experience with our Leggerissima! Our suggestion is that you fold the pizza slice in half and eat it with your hands. That’s right: artisanal in preparation and in tasting!
